BACKGROUND TO TOBERMORY

The s-shaped stills at Tobermory are key. They create reflux and underlying lightness. Distillery manager Ian MacMillian, who also manages the Deanston Distillery, has kept a watchful eye on this whisky. The underlying lighter spirit has spent 23 years in Sherry. This whisky is exceptionally dynamic, keeping the light mossy character from the new make and picking up the rich sweetness of the raisins from the sherry cask. This a unique and special combination.
