What Makes a Single Cask Whisky Different?

Stand two casks from the same distillery, filled on the same day, side by side in a warehouse for ten years, and you'll get two different whiskies. Not similar. Different. That's the reason single cask whisky exists, and it's the reason we built The Single Cask around it. Our mood categories, our Taste Masters, the warehouse in Glenrothes — all of it exists to help you find the one cask, out of many, that's right for you.

Every cask tells a different story

Most whisky you've tasted is a blend of casks, sometimes hundreds of them, mixed together so every bottle tastes the same as the last. That consistency is the point of a house style, and there's nothing wrong with it. But it also means a lot of individual character gets smoothed away along the way.

A single cask whisky skips that step. Everything in the bottle came from one cask, filled once, matured on its own. Nothing added to balance it, nothing blended in to soften the edges. You're tasting the whisky exactly as that cask made it, for better or occasionally for stranger.

Two casks, same distillery, two personalities

Fill two casks with spirit from the same distillery on the same day, rack them next to each other in the same warehouse. Ten years later, one might turn out soft, honeyed and easy-drinking, what we'd call Cheerful. The other, matured a few feet away, might turn out big, spicy and full of smoke. Bold, through and through.

Nobody can fully explain why. The grain of the oak, how tightly the staves were coopered, where the cask sat on the rack, even the microclimate of that corner of the warehouse, all of it plays a part. It's why we say every cask has its own personality. Not a marketing line. It's what we see on the tasting bench every week.

Why most whisky never sees a single cask release

Scotland has around 154 working whisky distilleries, and between them their warehouses hold something like 22 million maturing casks (Scotch Whisky Association, 2026). Most of that whisky ends up vatted together, either into single malt or blended scotch. Single cask bottlings are a small fraction of total production, because a distillery only really knows a cask is exceptional once it's matured, and by then it's already unique. Setting one aside instead of blending it in is a deliberate choice, and usually only casks with real character earn it.

The numbers behind every bottle

A cask can only be filled once, so its bottle count is fixed the moment it's set aside. A standard hogshead, around 250 litres, yields somewhere between 300 and 350 bottles once matured, fewer if it's bottled at full cask strength, and fewer again after years of evaporation through the wood, known as the angel's share. Once those bottles are gone, that whisky doesn't exist anymore. It can't be recreated, because the one thing that made it what it was, that specific cask in that specific spot in the warehouse, is empty.

Bottled as it was meant to be tasted

Cask strength, no colouring, no chill-filtration

Because the whole point of a single cask whisky is its individuality, we don't do anything at the bottling stage that would flatten it back out. Every release from The Single Cask is bottled at natural cask strength, without dilution, chill-filtration or added colouring. What's in the cask is what ends up in your glass, oils, character and all.

That means our whiskies arrive stronger than the 40–43% ABV you might be used to, sometimes considerably so. You decide the strength, not us. Add water a few drops at a time until the whisky opens up the way you want it to. We'll cover exactly how to do that properly next week.

How we find the casks worth bottling

Not every cask earns a single cask release. Before anything is bottled, it goes in front of our Taste Masters, the team who decide whether a cask has the character, balance and story to stand on its own. It's closer to matchmaking than manufacturing: matching a cask's personality to the right drinker at the right time. We'll take you inside one of those tasting sessions later in this series. Finding the right single cask for you

With every cask different, the obvious question is how you know which one is right for you.
