Nose: Malt and flower petals drizzled in lime juice.

Palate: Coconut and orange juice leads into green tea, black pepper and lemon.

Finish: Medium with rounded oak and malt sprinkled with sea salt.

BACKGROUND TO TOBERMORY

Prior to 1993, the wood policy at Tobermory was basically: ‘the cask is made of wood. Wood comes from trees. It’ll be fine.’ That was before Burn Stewart took over. This whisky was distilled in 1995 and put into an ex-bourbon hogshead and left to mature for 24 years. So we knew this would be some pretty special stuff when we came across this cask. Tobermory is a whisky that takes time to mature, to develop and evolve nuance and complexity. This one has done exactly that.
