Aside from its peat, Highland Park is known for its exclusive use of Sherry casks for maturation, giving their spirit a light smoky, fragrant, and a fruity character.
History
Distilleries origins are often shrouded in light mystery, and the same goes for Highland Park. Rumors have it that it was founded by a priest who turned out to be a smuggler, or by a farmer. Some say the distillery was previously known as Rosebank or Kirkwall--these are some of Highland Park's mysteries that we might never solve.
A known fact is that the distillery was boldly owned by the first William Stuart of Miltonduff in 1870, and then went to James Grant (Stuart's business partner) in 1895. The business created a firm relationship with Robertson & Baxter (R&B). Highland Distillers took over next in 1937. And lastly, Edrington Group.
Highland Park is loved by many and has a dedicated following. It released series of drinks themed around Orcadian history and Norse gods. Since the 1980s, they repackaged their products and released many more expressions such as 12 and 18 YOs.
Highland Region
Highland is the greatest of all whisky regions and provides a huge variety of different flavours and characters. It goes from the lighter whiskies all the way through salty coastal malts.
While malts from the West Highland distilleries tend to have a sweet start and dryish finish, the far North Highland malts character are greatly influenced by the local soil and the coastal location of the distilleries giving light bodied whiskies with a spicy character and a dryish finish, sometimes with a trace of saltiness. Central, Southern and Eastern Highland malt whiskies are generally quite a mixed bunch. Fruity and sweet. They are lighter bodied with a tendency to have a dry finish.
