Craigellachie's distillery character is big and meaty, with notes of smoke and spice, backed by some dried fruit and apple.  Single cask releases can lend themselves well to a range of cask finishes, including ex-sherry.

About

Craigellachie prides itself on its sulphurous note. Their site smells of cabbage and beef stock, the smell of copper inside worm tubs that contributes a part of the character and gives weight to the palate. Long fermentation adds tropical fruitiness. The business has been a major contributor to White Horse since the late 19th century. Their full, yet aromatic character lends them a special place for blending, but only time can tell if they will be granted a promotion as other front-line malts.

Craigellachie is often used in blends because of its unique 'meaty' characteristics, the result of the low copper content of the worm tubes used to cool the spirit as it comes off the stills. This makes single cask releases a special opportunity to enjoy Craigellachie whisky in its raw form.

History

Before the name Craigellachie is associated with the distillery, the village has always been an important name associated with whisky-making. The village of Craigellachie is linked with many railroads that connect Glasgow, Edinburgh, and Perth within the region.
The distillery was built on a village of the same name in 1980. It was designed by Charles Doig and owned by Sir Peter Mackie of White Horse and Alexander Edward. Lighter and fruitier, a character that was already in Charles's mind as he created the distillery, something different from older distilleries. Their core malt was a crucial ingredient to the popular brands Mackie's Old Smuggler and Old Gaelic, both of which are massively successful in Australia and South Africa. In 1900, Edward entrusts Craigellachie to White Horse to venture out to other interests.
In 1988, as White Horse was becoming a part of DCL, the Monopolies Board insisted to sell off many of its businesses including Craigellachie, instead of absorbed to DCL. So it did, Bacardi became the new owner until now.

Speyside Region 

Although, Speyside was not accepted as an official whisky region it is now generally approved as a subdivision of the Highlands Region. Over half of all Scotland's distilleries are located in here which makes it the most densely populated whisky region in the world. Many of the most popular single malts are produced in Speyside also the malts here are typically said to be the sweetest of all scotch whisky malts. Their whiskies are known for being frugal with peat and full of fruit. Pear, apple, vanilla, honey and spice all have a part a role in expressions from this region, which are commonly matured in sherry casks.
